I came up with this recipe this morning. The girls both had two bites of their mini muffins and I ate 2 big muffins; so I'd say it pretty much was a success. Thanks to Mrs. Mittens for the pumpkin idea.
Breakfast Muffins
1/4 cup canola oil
3/4 cup sugar
1 1/2 cups mashed very ripe bananas
2 large eggs
1/3 cup plain yogurt
1/4 cup canned pumpkin
1 tsp vanilla
Mix these ingredients in a large bowl.
Add:
1/4 cup ground almond) (I ground them in my blender)
1/4 cup ground flax seed (I buy the whole flax seed and then use an old coffee grinder to grind them. Store in the freezer once ground.)
1/4 cup wheat germ
1 1/4 cup white flour
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
Mix until blended. Cook at 350 F for 15 -18 minutes for mini muffins and 20 -25 minutes for regular size muffins.
